- 5/16 cup kimchi (homemade, or store-bought)
- 4 cloves garlic (grated)
- 1/4 cup scallions (minced, green and light green parts)
- 1 Tbsp. red miso
- 2 tsp. toasted sesame oil
- 1/2 cup dashi
- 1 tsp. broth
- 1 cup vital wheat gluten
- 1/4 cup chickpea flour
- 1/4 cup nutritional yeast
- 1 cup nutritional yeast
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. smoked sea salt (or fine regular, or a combination of both)
- 2 tsp. smoked paprika (or sweet, or a combination of both)
- 2 tsp. italian seasoning (or other mix of dried herbs of choice)
- 2 tsp. tomato (dried, powder, optional)
- 2 tsp. shiitake (dried, powder or Porcini powder, optional)
- peppercorn (Ground rainbow or other, to taste)
- 2 cups filtered water (cold or room-temperature)
- 1 oz. dried shiitake mushrooms
