Iceberg and sorrel leaves provide the basis for this delicious salad crowned with cured goat cheese and pork steak. Drizzled with olive oil and vinegar, this salad is light in calories but hearty in the stuff that counts. Almonds add a lovely bit of crunch to each bite. You can use any meat for this salad or substitute vegetables if you are vegetarian.

- 6 slices cheese (Palhais Chèvre, or cured goat cheese)
- 3 pork steaks (cut in strips)
- salt (to taste)
- ground black pepper (to taste)
- 1 Tbsp. butter (for steaks)
- ground coriander (to taste)
- 4 lettuce leaves (iceberg)
- 10 sorrel (leaves)
- 3 Tbsp. almonds
- olive oil (to taste)
- vinegar (to taste)

Directions
- Place the cheese in the freezer.
- Season the steaks with salt and pepper.
- Melt the butter a frying pan, add the steaks, and saute until golden. Before removing from heat, season with ground coriander.
