- 1/2 cup vegan butter (– I use Melt or Earth Balance, regular butter also works if you don’t need it to be vegan)
- 3/4 cup dark brown sugar (Packed)
- 1/3 cup molasses
- 2 Tbsp. applesauce (or 1 egg)
- 2 Tbsp. water
- 2 2/3 cups all purpose gluten free flour mix (Erika’s)
- 2 tsp. ginger powder (Ground)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 tsp. pumpkin pie spice (or 1/2 Teaspoon each ground cinnamon, nutmeg and allspice)
- tapioca
- potato
- 1/2 cup powdered sugar
- 1/4 tsp. vanilla extract (learn to make your own over here)
- 1 tsp. milk (Alternative, or Milk)
