- 1/2 cup honey (agave nectar, or real maple syrup)
- 1/4 cup unsweetened applesauce
- 3/4 cup coconut oil (unrefined, melted and cooled)
- 2 1/2 cups shredded zucchini
- 2 eggs
- 2 tsp. ground cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. lemon juice
- 1/2 cup chopped walnuts (optional)
