- 3/4 cup unsalted butter (softened, dairy-free use Earth Balance/Smart Balance butter)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 large egg (room temperature)
- 1/4 cup molasses
- 1 Tbsp. pure vanilla extract
- 2 1/4 cups gluten free all purpose flour (I like Pillsbury gluten-free or GF Jules)
- 1/2 tsp. xanthan gum (leave out if your flour already has it)
- 1 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. allspice
- 6 Tbsp. granulated sugar (for rolling)
- gluten (optional)
- sprinkles (optional)
- 3 cups gluten free white chocolate chips (omit if dairy-free and see glaze recipe)
- 3 Tbsp. shortening (omit if dairy-free)
- 1 cup powdered sugar
- 2 tsp. pure vanilla extract
- 4 tsp. non dairy milk (I like almond, cashew or coconut milk.)
