- 1/2 cup peanut butter (natural, salted, crunchy or smooth)
- 2 Tbsp. coconut oil (refined, melted, or canola oil)
- 1 tsp. pure vanilla extract
- 3 Tbsp. agave nectar (or sub maple syrup, or honey if not vegan)
- 1 1/2 cups gluten-free rolled oats
- 1/2 cup oat flour (ground from GF oats)
- 1/2 cup almond meal (ground from raw almonds)
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 pinch sea salt (add more or less depending on saltiness of your PB)
- 3 Tbsp. walnuts (lightly crushed, or sub other nut)
- 1/2 cup dark chocolate chips (or semisweet, non-dairy for vegan)

Everyone in the family from my 3 year old granddaughter to my husband gave these cookies a thumbs up. My husband said, "If you didn't know they are healthy, you'd never guess. These taste great!" Yes, he still somewhat assumes that healthy food doesn't taste good. He's slowly coming around.
