This recipe is really good ALTHOUGH I made a few adjustments.
First I used half the given about of GF flour and subbed in the rest with brown rice flour, also i added 1 tbsp of mayo( if not vegan) and splurge of olive oil. I had covered the loaf tin with foil to prevent it from burning halfway through baking then took it off to crips up the remaining half. This makes a great sandwich bread! i highly recommend it as many other recipes tend to come out very dense and not bread like. My mum says it could pass for a scone, the mayo makes the texture of the bread moist and lovely so you don't end up with a heavy and dense loaf.
