- 3/4 tsp. xanthan gum (omit if your blend already contains it)
- 1/4 cup cornstarch
- 1 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. kosher salt
- 1/2 tsp. freshly grated nutmeg
- 3/4 cup granulated sugar
- 8 Tbsp. unsalted butter (melted and cooled)
- 2 eggs (100 g, weighed out of shell at room temperature, beaten)
- 3/4 cup plain yogurt (at room temperature)
- 1 tsp. vanilla bean paste (or 1 1/2 teaspoons pure vanilla extract)
