- 2 lb. ground turkey (free range organic, we use Heidi's Hens® Certified Organic Turkey)
- 1 1/2 cups gluten free bread crumbs
- 1 spring onion (large, or scallion, or 2 small, diced fine)
- 1 carrot (medium large, processed or diced very fine)
- 2 cloves garlic (fresh, minced)
- 1 tsp. fresh ginger (grated)
- 2 Tbsp. chopped parsley (fresh)
- 2 Tbsp. mint leaves (fresh chopped)
- 2 Tbsp. cilantro leaves (fresh chopped)
- 1 free range egg (organic, beaten)
- 1 lime (Juice from 1 fresh medium lime)
- 1 Tbsp. molasses (or wheat-free tamari sauce)
- 1 Tbsp. agave nectar (or real maple syrup)
- Sea salt and ground pepper, to taste (use less salt if you use tamari sauce)

- 1 chile (fresh diced, or hot pepper flakes, to taste)

- 4 carrots (sliced into matchsticks)
- 3 Tbsp. molasses (or gluten-free Tamari)
- 2 Tbsp. balsamic vinegar
- sea salt (to taste)
- 12 oz. baby spinach leaves (1 bag)
- 2 Tbsp. chopped parsley (each of fresh, mint and cilantro)
