- 1 cup old fashioned oats (not quick or instant)
- 1/2 cup chopped walnuts (roughly)
- 2/3 cup dark brown sugar (packed)
- 1 tsp. canela
- 1/4 tsp. fine sea salt (or kosher)
- 8 Tbsp. unsalted butter (cool but not frozen + more to butter the dish)
- 4 cups rhubarb (sliced into 1-inch pieces, about 16 ounces)
- 2 cups apple (pieces roughly the size of your thumb, about 10 ounces from peeled and quartered apples)
- 2 cups pear (pieces roughly the size of your thumb, about 12 ounces from peeled and quartered pears)
- 1/4 cup cornstarch
- 2/3 cup dark brown sugar (packed)
- 1/3 cup maple syrup
- 1 tsp. canela
- 1/4 tsp. fine sea salt (or kosher)
- 2 tsp. vanilla
- 1 tsp. orange zest (zest of 1 medium orange)
