- 1 1/2 tsp. xanthan gum (omit if your blend already contains it)
- 2 tsp. instant yeast (or 1 tablespoon active dry yeast)
- 1 tsp. sugar
- 1 tsp. kosher salt
- 3/4 cup warm water (6 fl. oz., about 100°F)
- 3 Tbsp. extra virgin olive oil (plus an extra tablespoon for drizzling)

It's hard to give it an honest review here... It was effective... held up the pie. It didn't taste bad... I might try it again someday.
...But to be truthful, when i went to the GlutenFree on a Shoestring site, i expected recipes that were suitable for, well, a shoestring budget. These recipes might ultimately cost less than gluten-free kits or pre-made meals, but the amount of ingredients and tools involved are wildly beyond my personal experience of a working class shoesting budget. I wasn't able to use all the methods suggested in my small bachelor-sized kitchenette. But i do see the potential for this to work for those who can afford to live in a larger space, and who can afford to buy and store lots of quality food prep equipment.
For anyone looking for tips with the dough not rising.. mine didn't either! I separated it the best i could (it was extremely crumbly) into two, added one extra-large egg to each 'ball', and beat it with a handheld beater on high. I blind baked it in a small, silicone square tray, and it puffed up just enough to resemble traditional pizza crust.

It was far from how I'd want it to taste. It wasn't even editable. I was super excited to try it and I spent an hour and a half working on it, waiting for it to rise. I even had my mom try it who had the same opinion as me.
