- 1/2 cup tapioca starch (/flour)
- 1/4 tsp. xanthan gum (optional, but will make the cookies much more stable)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. kosher salt
- 4 oz. chocolate chips (semi-sweet)
- 1/3 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 8 Tbsp. unsalted butter (at room temperature)
- 3/4 cup peanut butter (no-stir)
- 2 eggs (120 g, out of shell at room temperature, beaten)
- 1 tsp. pure vanilla extract
