- 2 Tbsp. potato starch
- 1 Tbsp. baking powder
- 1 Tbsp. sugar (or other dry sweeteners like date or coconut sugar.)
- 9 drops liquid stevia (for sugar.)
- 1 Tbsp. oil
- 2 eggs (or egg replacer, I used Ener G egg replacer)
- 1 3/4 cups buttermilk (or milk substitute with 1-1/2 Tbsp. vinegar)
- 1 1/2 Tbsp. vinegar
- chopped nuts (optional add-ins, chocolate chips, cut up bananas, blueberries)
