- 1/2 cup potato starch
- 1 tsp. xanthan gum
- 1/4 tsp. salt
- 2 large eggs (at room temperature, or set eggs in a bowl of warm water for a few minutes before using)
- 1/2 tsp. vanilla extract
- oil (for deep frying, I prefer peanut)
- sugar (for dusting)
- jam (or jelly of your choice for the filling)
