- 1 1/2 cups mushroom broth (vegetable broth or water)
- 1 onion (medium, finely chopped or grated)
- 2 stalks celery (finely chopped)
- 8 oz. cremini mushrooms (fresh, roughly chopped)
- 1 cup wild mushrooms (fresh or reconstituted from dried, roughly chopped)
- 1 1/2 Tbsp. fresh thyme (finely chopped)
- 1 Tbsp. Italian parsley (fresh, roughly chopped)
- 2 eggs (large farm fresh brown)
- 2 Tbsp. olive oil
