- 2 cups onion (sliced, 1 large or 2 medium onions)
- 1 cup celery

- 4 cloves garlic (or 4 tsp crushed garlic)
- 4 cups water (or stock)

- 1 1/2 Tbsp. balsamic vinegar (or apple cider vinegar)
- 1 1/4 tsp. salt (adjust to taste)
- 1 tsp. black pepper (freshly ground, or ½ tsp fine ground, adjust to taste)
- 1/2 tsp. fennel powder (or seeds, optional)
- 1/2 tsp. dried thyme (1 tsp if using fresh)
- 1 cup heavy whipping cream (or half and half)
- 2 Tbsp. cornstarch (mixed in ¼ cup water, use as needed)
