- 1 tsp. baking soda
- 3/4 tsp. guar gum (optional: your muffins will come out softer if you use it, but they will hold together even if you don’t)
- 1/4 tsp. salt
- 2 egg
- 1/2 cup oil
- 1/2 cup milk (or yogurt, yogurt makes for much softer muffins)
- 1 tsp. vanilla extract
- 1 1/2 cups fruit (fresh or frozen, unthawed, and/or nuts)

Will use way less baking powder next time.
Worked out great. 3/4tsp tartar and 1+1/2tsp bicarb w 3/4tsp guar gum instead of baking powder
