- 1/2 cup white rice flour
- 1/2 cup sweet rice flour
- 1/4 cup granulated sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. xanthan gum
- 2 large eggs
- 1 cup milk (or dairy-free milk)
- 2 Tbsp. olive oil
- 14 oz. wieners (mini-, or 8 hot dogs cut into bite-sized pieces, about ½-inch thick coins)
