- 100 grams almond meal
- 4 Tbsp. icing sugar (unrefined, or powdered sugar)
- 2 tsp. xanthan gum
- 160 grams unsalted butter (cold, chopped)
- 2 eggs
- 2 Granny Smith apples (peeled cored and grated)
- 45 grams toasted slivered almonds
- 65 grams dried cranberries
- 55 grams sultanas
- 3 fresh dates (pitted and chopped)
- 35 grams apricots (dried chopped)
- 35 grams raisins
- 40 grams currants
- 1 tsp. mixed spice
- 1/2 tsp. ground nutmeg
- 80 mL maple syrup
- 1 lemon (approx 1½ tablespoons juice)
- 80 grams suet (grated vegetable, I used butter)
- 2 Tbsp. marsala (or Brandy)
- powdered sugar (or Unrefined, for dusting)
