- 1/2 cup gluten (Bob's Red Mill, Free Sweet Rice Flour)
- 2 1/4 cups whole milk
- 6 large eggs
- 2 1/2 Tbsp. sugar
- 2 1/2 Tbsp. matcha powder (high-quality, I use Encha Organic Latte Grade)
- 2 Tbsp. unsalted butter (melted and cooled, plus more for the pan)
- 1 1/2 tsp. pure vanilla extract
- 3/4 tsp. kosher salt
