- 1 lb. ground beef
- 1 onion (Small, roughly chopped into large pieces)
- 1 bell pepper (cut into large chunks)
- 1 bunch broccoli (divided into bite sized florets, SAVE THE STEM – set it aside)
- 4 medium carrots (cut into thick strips)
- rice noodles (Asian Style, I like these brown rice Pho noodles pictured below – There are many brands of gluten free rice noodles suitable for this stir fry and they are located in your Ethnic Foods Aisle of the Grocery Store)
- 1 clove garlic (minced)
- 1/4 cup gluten-free tamari sauce (Braggs Amino Acids, tastes just like soy sauce but is gluten free and better for you than soy sauce or you can use)
- 1/4 cup brown sugar (Packed)
- 1 Tbsp. ginger (Freshly Grated, you can use a regular grater or this tool which is handy to have aroundhttp://us.microplane.com/microplaneclassicserieszestergrater.aspx)
- fresh ginger (*if you don’t have, use 1/2 tsp. of dried ginger)
- 1 Tbsp. Siracha sauce (LOVE this stuff)
- 2 Tbsp. rice vinegar (or Apple Cider Vinegar)
- 1 Tbsp. peanut butter (yes….peanut butter though you can substitute with cashew, almond, or Sunbutter)

Delicious! I like extra sauce & extra veggies, so I doubled the sauce portion & put half on the beef & half on the veggies. Maybe add cornstarch to thicken the sauce?

I added Great Value brand chili sauce instead of the one recommended, and it turned out great! It fed my whole family, and we’re so glad to have a break from frozen pizza!
