- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 1/8 tsp. kosher salt
- 1 tsp. ground cinnamon (optional)
- 1/4 cup granulated sugar
- 1/3 cup light brown sugar (packed)
- 6 Tbsp. vegetable shortening (nonhydrogenated, I use Spectrum brand, melted and cooled)
- 2 Tbsp. honey
- 2 Tbsp. unsulphured molasses
- 1/2 tsp. pure vanilla extract
- 1 egg (50 g, weighed out of shell at room temperature, beaten)
- 4 Tbsp. milk (at room temperature)
- 1/2 cup granulated sugar
- 1 1/2 tsp. ground cinnamon
