These muffins are delicious!
I had to substitute the sugar for Monkfruit sweetener and the buttermilk for almond milk.
Even with the tweaks, they turned out well.

We love healthy muffins. Subbed sugar out for honey and reduced to 1/4 cup. Used skim milk instead of buttermilk. Might try kefir next time. Added ground ginger. 20 min was too long in my oven and be sure to place on center rack.

A bit on the small side for me, next time I will double the recipe and make bigger ones. They were very delicious! My 19 year old son said they were the best muffins he’s eve4 had!
