- 1 cup gluten free flour blend (with xanthan gum, I used Bob’s 1 to 1)
- 1 cup corn meal (stone ground white, fine ground – read labels and check for cross contamination)
- 1/4 cup sugar (optional)
- 1 Tbsp. double acting baking powder
- 1 3/4 cups unsweetened almond milk
- 1/4 tsp. sea salt
- butter (for the pan, or suitable dairy free spread such as Earth Balance)
