I used my own gf flour blend (76g white rice, 76g brown rice, 35g tapioca, 35g potato starch, 14g potato starch, 9g corn flour for a total of 245g or 1 3/4cup) Used 1 cup 18% cream and about a 1/2 cup sour cream to soak. Browned the butter. Added one extra egg. Combined remaining wet ingredients first, then combined dry and wet and once mixed added baking powder/soda. Quickly and briefly mixed again. Folded in bacon bits, jalapeno, and cubed cheese. Baked at 410 for 5 minutes, then down to 375 for 20 minutes. Texture and flavour very good!
