- 2 cups gluten free all purpose flour ( , I like Pillsbury gluten-free. Not all gluten-free flours are created equal. You may experience different baking results depending on the gluten-free flour blend you choose.)
- 1/2 tsp. xanthan gum (If your flour already has it leave out)
- 1 tsp. baking soda
- 1/2 tsp. gluten free baking powder
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1/4 tsp. ground allspice
- 2 cups carrots (grated, 2 large carrots)
- 1 cup shredded sweetened coconut
- 1/2 cup raisins
- 1 tsp. pure vanilla extract
- 1 cup crushed pineapple in juice (not syrup; do not drain)

The cake had a great flavor...hands down one of the best, and the frosting was absolutely yummy, but the texture was off- very mushy- the cake itself was done throughly but texture off- maybe the brand of flour- even though it was still rice flour.

I like that this doesn’t have any added fat so I could indulge in the real cream cheese frosting! I had a bunch of leftover pumpkin purée so used this instead of applesauce. I used 1/2 c monk fruit sweetener and 1/2 c Organic sugar and unsweetened coconut. I thought it was plenty sweet esp with frosting. In the 2nd batch, I added a bit more spices, I also used some ground ginger.
