- 2 cups potato starch
- 1 cup tapioca starch
- 4 1/2 tsp. baking powder
- 4 1/2 tsp. guar gum

Directions
- Whisk ingredients until well incorporated. For an extra light flour blend, whisk ingredients in a stand mixer for five minutes.
- Store in an airtight container until ready to use. If you reside in a hot or humid climate, store container in a refrigerator to keep flours from spoiling.
