These are UH-MAZING!!! Seriously! On par with wheat flour cornbread muffins. We have a type 1 diabetic child who also has celiac disease, so we are always looking for delicious gluten free options. I followed the recipe and directions exactly, but I think next time I'll use a little less sugar, or substitute Splenda just to lower the carb count for our diabetic son. These are absolutely delicious and a huge hit with everyone in our family.
