- 1/4 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. xanthan gum (and guar gum blend, *see notes)
- 1/8 tsp. sea salt
- 1 stick butter (room temperature, remove from fridge 1 hour prior to using)
- 1/2 cup granulated sugar (or finely ground coconut sugar)
- 2 eggs (large room temperature, remove from fridge 1 hour prior to using)
- 1 tsp. vanilla extract
- 2 Tbsp. milk
- 6 cups white rice flour
- 1 cup tapioca flour (also known as tapioca starch)
- 1 Tbsp. tapioca flour (or cornstarch)
- 1 Tbsp. potato starch (or arrowroot)
- 1/4 tsp. baking powder
- 1 Tbsp. xanthan gum
- 1 Tbsp. guar gum
- 2 sticks unsalted butter (room temperature)
- 1 cup powdered sugar
- 1 tsp. vanilla extract
- 14 oz. white chocolate chips (bag, warm in microwave for 30 seconds, stir, and repeat until melted)
- 1 pinch salt
