- 1 1/2 tsp. xanthan gum (omit if your brand already contains it)
- 1/2 cup cultured buttermilk
- 1/2 cup nonfat dry milk
- 1 Tbsp. instant yeast (or 1 1/2 tablespoons active dry yeast)
- 1/4 tsp. cream of tartar
- 1/4 tsp. baking soda
- 1 Tbsp. light brown sugar (packed)
- 1 tsp. kosher salt
- 1 tsp. apple cider vinegar
- 2 Tbsp. unsalted butter (at room temperature)
- 1 egg white (25 g, at room temperature)
- 1 1/2 cups warm water (about 95°F*)
- 1 egg (any size at room temperature, beaten with 1 tablespoon milk or water)
- sesame seeds (for sprinkling, optional)
