I made these twice now, once with Almond and Oat flour, and once with Sorghum flour and Oat flour, the Almond and Oat flours are the absolute best combination of flours for this recipe. But, I did not use any coconut oils or sugars, instead I used white sugar 1/4 cup and Canola oil, and replaced the Greek yogurt with unsweetened almond milk. This combination of ingredients made a light, slightly sweet very yummy muffin.
