- 2 cups gluten-free flour (all-purpose, I use my Better Than Cup4Cup blend)
- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. kosher salt
- 6 Tbsp. unsalted butter (at room temperature)
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar (packed)
- 2 eggs (100 g, weighed out of shell at room temperature, beaten)
- 2 tsp. pure vanilla extract
- 1 cup bananas (mashed VERY ripe, about 2 medium-sized bananas, peeled and mashed)
- 1/2 cup milk (any kind, at room temperature)
- 8 oz. cream cheese (at room temperature)
- 2 Tbsp. unsalted butter (at room temperature)
- 1/2 vanilla bean (or 1 teaspoon pure vanilla extract)
- 1 cup confectioners' sugar
- 5 Tbsp. unsalted butter (in place of 6 tablespoons)
- 1 egg (50 g, weighed out of shell + 2 egg whites, 50 g in place of 2 eggs)
- 1/2 cup light sour cream
- 2 cups milk
- 6 oz. light cream cheese (at room temperature, in place of cream cheese and butter)
- 3/4 cup sugar (confectioners’)
