  • 3 bananas (very ripe, Look for brown spots & softness)
  • 1 whole egg
  • 1/2 tsp. pure vanilla extract
  • 3 Tbsp. coconut oil (Note: proportions change when the oil is solid versus liquid. Do a quick zap in the microwave to melt the oil before measuring)
  • 1 Tbsp. honey (or agave nectar)
  • 3/4 cup milk (we used dairy in these recipe, almond or soy work great too!)
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar
  • 3 Tbsp. baking powder
  • 3/4 tsp. sea salt
  • 1/2 ground cinnamon
  • 1/2 Tbsp. nutmeg (or any of your other favorite warm spices)
  • 1 1/4 cups almond meal
  • 1 1/4 cups gluten free flour
  • 3/4 cup gluten-free oats
