- 2 lb. chicken thighs (4-6 thighs, bone-in, skin-on)
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1/2 cup Smucker’s® Apricot Preserves (or Smucker’s® Simply Fruit Apricot Spreadable Fruit)
- 2 Tbsp. honey
- 2 Tbsp. tamari (gluten-free)
- 1/2 tsp. fresh ginger root (finely grated)

Directions
- Preheat the oven to 400°F.
- Spray a 9-inch metal pan lightly with nonstick cooking spray, and set aside.
- Season the chicken thighs on both sides with salt and black pepper. Arrange skin side up in the baking pan.
