- 1 tsp. xanthan gum (if your blend does not already contain it)
- 1/2 cup unsalted butter (cubed and cold, can also use vegan butter or solid coconut oil)
- 1 tsp. cinnamon
- 1/2 tsp. kosher salt
- 1 Tbsp. brown sugar
- 4 Tbsp. cold water
- 2 Granny Smith apples (small, sliced thin, about 2 cups)
- 1 pear (ripe barlette, sliced thin, about 1 cup)
- 1 Tbsp. cornstarch (or tapioca flour)
- 1 Tbsp. brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 Tbsp. lemon juice
- 1 pinch salt
- 1 Tbsp. butter (or vegan butter)
