- 3/4 cup sugar (Baker's Special, ** or superfine sugar)
- 1/4 cup cornstarch
- 1 1/2 cups egg whites (10 to 11 large eggs, separated, yolks discarded or reserved for another use)
- 1/4 tsp. salt
- 1 1/2 tsp. cream of tartar
- 2 tsp. vanilla extract
- 1/4 tsp. almond extract (or Fiori di Sicilia, optional)
- 3/4 cup sugar (Baker's Special, ** or superfine sugar)
- granulated sugar (**Can you substitute regular, ? Yes; it'll take much longer for the egg whites to attain their require volume, and the cake's texture won't be as fine. See tip at right for more information.)

Maybe I'm overzealous because I'd never made an angel food cake, let alone a gluten free one, but this came out deee-lightful. This was for my husband's birthday but I'm tempted to start making these on the regular. Dangerous!
