- 1 1/2 tsp. xanthan gum (omit if using Better Batter)
- 1/2 tsp. kosher salt
- 1/4 tsp. cream of tartar
- 1/4 tsp. baking soda
- 1/4 cup sugar
- rapid rise yeast (or 2½ teaspoons instant, breadmaker)
- 1/2 tsp. ground nutmeg (fresh finely-, optional)
- 1 tsp. apple cider vinegar
- 1 large egg (extra-, plus 1 extra-large egg white)
- 9 oz. milk low fat (is fine, nonfat is not; nondairy is fine)
- 4 Tbsp. unsalted butter
- oil (for frying)
- 1 cup confectioner's sugar
- 2 Tbsp. golden syrup (Lyle's, or honey)
- 4 Tbsp. water
