- 1 tsp. sea salt
- 1 tsp. baking soda
- 1 tsp. canela
- 3 eggs
- 1 1/4 cups cooking oil
- 2 tsp. vanilla
- 1 1/4 cups fresh pineapple (about ½ fresh pineapple, cut into chunks, pulsed until coarsely chopped and lightly drained - reserve juice!)
- 1 1/4 cups bananas (mashed very ripe, about 4-5 bananas -- I use frozen and thawed bananas that end up ultra gloopy and sweet)
- 1 cup walnuts (chopped)
- 1 cup dried tart cherries
- 1 cup confectioner's sugar
- pineapple juice (reserved)
