- 2 apples (large, I used honey crisp - peeled cored, and shredded or grated, water squeezed out completely.* You should have about 1 cup grated apples after squeezing)
- 1 apple (medium, peeled, cored, and diced into 1/4” pieces)
- lemon juice (squeeze- to avoid the apples browning, optional)
- 2 1/2 cups blanched almond flour
- 1/2 cup tapioca flour (+ 1 Tbsp, divided)
- 1 tsp. baking powder (***see note to make corn free baking powder if desired)
- 1/2 tsp. baking soda
- 1 Tbsp. ground cinnamon (+ 1/2 tsp , divided)
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/2 tsp. fine grain sea salt
- 5 large eggs (room temperature)
- 1/3 cup almond milk (or other non-dairy milk)
- 3/4 cup maple sugar (pure, or coconut sugar, I prefer maple)
- 1/4 coconut oil (refined, melted and cooled to almost room temperature)
- 1 tsp. pure vanilla extract
- 1/2 tsp. pure almond extract (optional)
- 1 Tbsp. coconut oil (melted but cooled to almost room temperature)
- 1/2 cup coconut sugar (powdered maple sugar, is fine too if that's what you have on hand - **see note for instructions on making the powdered sugar)
- 1 tsp. ground cinnamon
- 3 tsp. almond milk (or other non-dairy milk)
- 1/2 tsp. pure vanilla extract
- chopped nuts (for garnish, optional)
