  • 1 apple (medium, peeled, cored, and diced into 1/4” pieces)

  • 1/2 cup tapioca flour (divided)
  • 1 teaspoon baking powder (***see note to make corn free baking powder if desired)
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground cinnamon (divided)
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon fine grain sea salt
  • 5 large eggs (room temperature)
  • 1/3 cup almond milk (or other non-dairy milk)
  • 3/4 cup maple sugar (pure, or coconut sugar, I prefer maple)
  • 1/4 coconut oil (refined, melted and cooled to almost room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon pure almond extract (optional)
  • 1 tablespoon coconut oil (melted but cooled to almost room temperature)
  • 1/2 cup coconut sugar (powdered maple sugar, is fine too if that's what you have on hand - **see note for instructions on making the powdered sugar)
  • 1 teaspoon ground cinnamon
  • 3 teaspoons almond milk (or other non-dairy milk)
  • 1/2 teaspoon pure vanilla extract
