- 1/2 cup arrowroot flour (Bob's Red Mill, or tapioca flour)
- 1/3 cup coconut sugar (Big Tree Farms, or brown sugar)
- 2 tsp. baking powder (Bob's Red Mill)
- 1/3 tsp. sea salt
- 2 eggs
- 2 Tbsp. lemon juice
- 2 tsp. lemon zest (or the zest of 1 lemon)
- 3 Tbsp. refined coconut oil (Nutiva, chilled)
- 1 cup fresh blueberries (see notes if you want to use frozen blueberries)
- coconut sugar (Big Tree Farms, to sprinkle on top - optional)
- 1/2 cup confectioners sugar
- 1 Tbsp. lemon juice
- 1 tsp. lemon zest
- 1/2 tsp. Simply Organic Vanilla Extract
