- 500 grams braising steak (or you could use venison, chopped into 5cm chunks)
- 2 onions (medium, chopped)
- 4 garlic cloves (chopped)
- 1 red chilli (finely chopped)
- 2 Tbsp. ground cumin
- 1 Tbsp. ground coriander
- 1 tsp. cayenne pepper
- 1 pinch ground cloves
- 1/2 ground cinnamon (a tsp)
- 2 Tbsp. tomato puree
- 2 bay leaves
- 3 thyme sprigs (fresh, chopped)
- 3 parsley sprigs (fresh, chopped)
- 200 mL red wine
- 400 mL beef stock (fresh, or a stock cube in 400ml water)
- 400 grams chopped tomatoes
- 400 grams red kidney beans (drained and rinsed)
- 30 grams dark chocolate (min 70% cocoa solids)
- coriander leaves (fresh, to garnish, optional)
