  • 1/4 cup millet flour (I used amaranth)
  • 1/4 cup white rice flour
  • 1 cup chopped pecans (roasted and, I omitted these but I bet they would be great!)
  • 7/8 cup sweet rice flour
  • 1/8 teaspoon sea salt (celtic)
  • 3/4 cup virgin coconut oil (nut free: use palm oil)
  • 1/4 cup maple sugar
  • 1/4 cup agave
  • 2 teaspoons vanilla
  • 18 pitted dates (– about 1.5 cups)
  • 3/4 cup coconut milk
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup cashews
  • 3 teaspoons agave nectar
  • 3/4 teaspoon salt
  • 3.5 ounces dark chocolate (I used 70% dark)
  • 1/2 cup rice milk (or whatever milk replacement you prefer)
  • 2 cups coconut (raw, unsweetened)
