- 260 grams all purpose flour (Original recipe calls for 270 gr, 9 1/2 oz)
- 10 grams cornstarch (Original recipe calls for 270 g-- I use 260 g APF + 10 cornstarch)
- 1 large egg (room temperature)
- 5 oz. unsalted butter (room temperature)
- 1 1/2 baking soda
- 1 ground ginger (Tbsp)
- 1/2 ground cardamom
- 1/2 ground clove
- 1/2 fine salt
- 7 oz. dark brown sugar (I use 190 only)
- 3 oz. molasses (I use grape molasses)
- 2 fresh ginger (tsp grated)
- ginger (candied, chopped, I didn't use)

Has anyone made these? I want to know if the fresh ginger makes a big difference in the taste of these cookies.
