- 1 tsp. gingerbread spice
- 1/8 tsp. kosher salt
- 4 Tbsp. melted butter
- 1/2 cup chopped pecans
- 1/8 tsp. kosher salt
- 2 cups white whole wheat flour (whole wheat pastry flour, you can also use, if you can't find the whole wheat pastry flour)
- 1 cup light brown sugar (packed)
- 2 tsp. baking soda
- 1/2 tsp. kosher salt
- 1/2 cup shredded coconut (packed)
- 1/2 cup raisins
- 1 red apple (medium, cored and diced into small dice)
- 2 cups shredded carrot (You can either shred your own or pick up a bag of the pre-shredded carrots at the grocery store.)

- 2/3 cup vegetable oil
- 3 Tbsp. orange juice
- 1 Tbsp. molasses
- 1 tsp. vanilla extract
