- 100 grams golden syrup (use corn/agave syrup if you can’t get this)
- 225 grams dark brown sugar (soft, not packed)
- 2 medium eggs
- 300 mL whole milk
- all-purpose flour (350 g, scant 3 cups plain)
- 2 tsp. bicarbonate of soda (baking soda)
- 4 tsp. ground ginger
- 3 tsp. ground cinnamon
- 1 pinch ground cloves (I used allspice)
- 1 pinch nutmeg
- 1 pinch salt
- 1 oz. fresh ginger (peeled or unpeeled, your choice)
- 5/8 cup water
- 1/4 cup sugar
- 1 pinch salt
- 250 grams caster sugar (1 cup plus 2 tbsp)
- 300 mL heavy cream (1 1/4 cups double)
- 50 grams unsalted butter
- 3 tsp. whiskey (optional)
- 2 tsp. flaky sea salt
- 200 grams unsalted butter (7.5 oz / 1 cup minus 1 tbsp)
- 330 grams powdered sugar icing
- 100 mL caramel sauce (scant 1/2 cup salted whiskey, see above)
