- 1 lb. peaches (fresh, ripe, sliced, I left the peel on and it was fine!)

- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. salt
- 3/4 cup brown sugar (packed)
- 2 eggs
- 1 tsp. vanilla
- 1/3 cup buttermilk
- 1 1/2 tsp. fresh ginger (grated)
