- 1 cup quinoa (uncooked, rinsed and cooked according to package instructions)
- 1 Tbsp. extra-virgin olive oil
- 2 large carrots (trimmed, halved, and sliced ¼" thick on the bias)
- 8 oz. mushrooms (stemmed and sliced)
- 1 cup broccoli florets
- 1 bell pepper (cored and sliced, I used ½ red and ½ yellow)
- 1 cup snap peas
- 2 bunches bok choy (chopped)
- 2 green onions (large, both white and green parts, sliced)
- 2 cloves garlic (sliced)
- 4 Tbsp. reduced sodium soy sauce
- 1 Tbsp. rice wine vinegar
- 1 Tbsp. sesame oil
- 1 Tbsp. ginger (freshly grated)
- 1 tsp. cornstarch (mixed with teaspoon water)
- 1/2 cup peanuts (chopped, for garnish, optional)
