- 14 oz. shirataki noodles (miracle, or kelp, soba, or noodle of your choice)
- tofu (I got mine in the refrigerated section at my Whole Foods, near the)
- olive oil (splash of)
- 1 cup shiitake mushrooms (sliced, cleaned gently with a towel, don’t rinse them)
- 1 cup kale (thinly chopped, about 1/2 a bunch)
- 2 tsp. minced ginger
- 1 clove minced garlic
- 3 scallions (white and green parts, chopped)
- 3 cups low sodium vegetable broth
- 1/2 cup edamame (shelled and thawed)
- 2 Tbsp. soy sauce (or tamari)
- basil (handful of chopped)
- mint (handful of chopped)
- lime juice (a squeeze of)
- toasted sesame oil (drizzle of)
- crushed red pepper flakes (or a splash of sriracha,, optional)
- sesame seeds (for garnish, optional)
- salmon (optional)
