Grapefruit and ginger make a most delicious combination. Serve with Earl Grey tea or Moscato wine.
Ingredients

- 2 Tbsp. ginger (dried)
- 1 1/2 cups unsalted butter (very soft)
- 2 3/4 cups Imperial Sugar (Free-Flowing Brown Sugar Shaker)
- 5 large eggs (room temperature)
- 1 tsp. salt
- 3 Tbsp. grapefruit zest (fine grated, no white bitter pith)
- 3/4 cup grapefruit juice (do not discard grapefruit peel)
- 1/4 cup candied ginger
- 2 Tbsp. grapefruit juice
- 1 cup Imperial Sugar Confectioners Powdered Sugar
- 2 grapefruits (from juiced fruits)
- 1/2 cup Imperial Sugar Extra Fine Granulated Sugar
- 1/2 cup water
- 4 Tbsp. honey
