- 1 1/2 cups AP flour
- 3/4 cup confectioners sugar
- 1 1/2 tsp. ginger (ground dried)
- 1 tsp. mild curry powder
- 1/2 tsp. kosher salt
- 1/2 cup demerara sugar (for rolling)
- 2 large egg yolks (beaten, I had egg whites that needed to be used, so I used them instead)
- coarse sea salt (good quality, for sprinkling, he likes Maldon, I used a coarse sel gris)
- candied ginger (—cut in half if the pieces are large)
